Seven Hills winery was founded in 1988 by Casey McClellan. It’s one of the oldest wineries in Walla Walla and focuses on making vineyard designated Cabernet Sauvignon and Merlot. This 2004 Cabernet Sauvignon comes from Red Mountain AVA in the Klipsun vineyard. Klipsun means sunset in the Chinook Indian language.
The Seven Hills 2004 Cabernet Sauvignon Columbia Valley Klipsun is a blend of 86% Cabernet Sauvignon and 14% Merlot. The nose is lovely with blackberry, fig, black cherry, plum, red fruit, vanilla and spices noted. On the palate it’s all cedar, tobacco, cocoa, and leather. The red and black fruit flavors are starting to fade. It’s so smooth and the tannins are polished. The finish is pleasant. It’s definitely a mature wine. This is a great example of the terroir from Red Mountain.
